Ingredients for 2 people
2 salmon fillets
3 tbsp flour (or almond flour)
1 tbsp olive oil
1 handful of asparagus
1 lemon.

Preparation
Rinse the salmon fillets under cold running water, pat dry with kitchen paper and season with sea salt and pepper. Spread the flour on a plate, turn the fish in it, knock off any excess flour.
Pour olive oil into the pan, heat it and fry the salmon fillets until golden brown on one side for about 2 minutes. Rinse the asparagus under cold running water, pat dry with kitchen paper, cut off the dry ends.
Peel the lower part of the asparagus stalks. Cut the lemons into wedges. Turn the salmon fillets, reduce the heat a little and spread the asparagus around the fish in the pan. Season with sea salt and pepper, add a little lemon juice to taste and cook for about 4 minutes, swirling occasionally.
Arrange green asparagus on plates and drape salmon on top. Garnish with the remaining lemon wedges.
